I was doing what is essentially a food show demonstration for about 1000 people. About half way through the event, three very attractive women walked up to our station. They asked what I was cooking and I gave my scpeal; these are bison empanadas with chipotle agave nectar and braised southwest greens. They all took some and the hottest of the trio turned red and quietly and embarrassingly asked another what bison was. She responded with great confidence "Oh, it's a type of bird/" When my chef burst out laughing, I did as well, and the only thing I could think about was Gavin saying "what if.."...
